Bright and light dishes are perfect for a summery brunch
I can't believe it's the middle of July already. I hope everyone is enjoying their summer so far. Summer, to me, means spending time with family and friends, and this breakfast board is a great idea for overnight guests and an informal brunch on a Sunday.
All these recipes can be made in advance and then put together in less than 10 minutes on the day of the get-together. I love that people can pick and choose what they want and no one will leave hungry.
Side note - I never liked Greek yogurt the first few times I ate it, but now I love it. My son-in-law always teases me whenever I ask him to try one of my recipes because his first question is, "is Greek yogurt in it?!" To soften the tartness of the yogurt, I stir in sugar-free vanilla pudding, changing it to this decadent, almost dessert-like, consistency.
Quiche is a regular recipe in my house because it's a great way to use up any vegetables you didn't get a chance to eat during the week. I used pizza dough as my base, but you can also buy store-bought refrigerated pie dough. I also used a 4-inch tart pan (you can buy it online) for each quiche. These are also great to make as meal prep - simply bake, cool and then freeze individually on a cooking sheet for 30 minutes, then store in a zip-top bag. Simply reheat in an air fryer for 8 minutes at 360.
The recipes below will be the "meal" part of your breakfast board. Simply fill in the gaps with cooked bacon and fruit of your choice. You can provide coffee and orange juice and tell your guests it's BYOB for an affordable get-together. Enjoy!
