Alphabet Vegetable Soup

2 tablespoons butter or vegetable oil

1 medium yellow onion, diced

3 carrots, diced

1 celery stalk, diced

1 russet potato, peeled and diced

1 sweet potato, peeled and diced

1 red pepper, diced

2 quarts (8 cups) chicken or vegetable broth

1 (14-ounce) can diced tomatoes, not drained

2 teaspoons salt

ΒΌ teaspoon freshly ground black pepper

2 tablespoons tomato paste

1 cup alphabet pasta (or other really small shape)

1 cup frozen green peas

1 cup frozen sweet corn

In a large stockpot, heat the butter or oil over medium heat. Add the onion, carrots, celery, potatoes, and red pepper. Cook about five minutes, stirring a few times during that time. Add the broth, diced tomatoes, tomato paste, salt, and pepper. Bring to a boil, then reduce the heat, cover the soup, and cook another 20-25 minutes.

Stir in the pasta and cook five more minutes. Stir in the peas and corn and cook about five more minutes, until the peas and corn are heated through.

Serves 6 grown-ups
