With these dishes, your guests won't guess it's brunch on a budget

I love to entertain, but sometimes I like the relaxed nature of a brunch. The pressure to prepare so many dishes is gone, and I think it's way less expensive to host people for brunch than for dinner.

I also love the fact that people enjoy a middle-of-the-day get-together but still have the rest of the day to do whatever they want. It's a win-win! And guess what? You don't have to feel obligated to serve alcohol - you can let your guests know it's BYOB to reduce your overall cost.

Today, my recipes will serve four, and you can multiply by how many guests you are hosting. Nearly everything can be made ahead of time and simply reheated right before guests arrive. However, I love my quiche at room temperature, so feel free to serve yours at room temperature.

When thinking of budget recipes for brunch, items with eggs, veggies and oats are my go-to. I like to have both savory and sweet options as I know not everyone likes the same type of items, and it's a good bet that they will want one or the other. Most days, I am team savory, but these carrot cake oats are my new favorite. My friend Justin is vegan and posted a similar recipe, but his version was much higher in sugar, so I adapted it a bit. It tastes like carrot cake - love.

Lastly, keep it simple with the drinks. Cucumber water is so delicious, especially in springtime. Simply fill a pitcher of water the night before, slice half of an English cucumber and place that in the pitcher. Brew a pot of coffee, and brunch is ready.
