Mom's Crinkle Top Molasses Cookies

¾ cup unsalted butter
1 cup granulated sugar (plus additional sugar for rolling the dough balls in)
¼ cup molasses
1 egg
2 teaspoons baking soda
2 cups all-purpose flour
½ teaspoon ground cloves
½ teaspoon ground ginger
1 teaspoon ground cinnamon
½ teaspoon salt
Melt the butter in a medium sized saucepan and let cool slightly. Add sugar, molasses, and egg beating well. Combine together in another bowl the flour, spices and salt. Add the flour mixture to the molasses mixture. Mix well, cover and chill for 1-2 hours. Form the dough into 1 inch balls (I use a spoon to scoop up some dough and then roll the dough between my palms), roll each dough ball in granulated sugar and bake on cookie sheets two inches apart. Bake at 375 degrees for 8-10 minutes but do not over bake. The cookies will fall slightly when you take them out of the oven and should be slightly crispy on the outside, and softer on the inside.
Makes about 26 cookies and I always double this recipe.
