Sunshine Quarto Potato Skillet With Andouille

1.5 lb bag red, white and blue potato medley

1.5T. Olive oil

1 t. kosher salt

1 t. chili powder

6 oz andouille sausage (roughly two sausages, diced)

½ c. yellow onion, finely diced

8 oz frozen yellow corn, thawed

2 oz cotija cheese (can also use grated Parmesan)

6 eggs

16 fresh spinach leaves Crema Mexicana for garnish

Salsa recipe:

4 dried chili arbols

¼ c. finely diced onion

3 garlic cloves

8 oz fire roasted crushed tomatoes (canned)

3 oz water

2 T. fresh cilantro

1t. salt

For main dish- Heat oven to 425. In a bowl, toss potatoes, onion, andouille, and corn, with olive oil, kosher salt and chili powder, making sure all of the potatoes are coated well with the olive oil. Place in a cast iron skillet. When oven comes to temperature, place skillet in oven and bake for 25 minutes, stirring twice through the cooking process. After 25 minutes, potatoes should be fork tender. Remove from oven and sprinkle with cotija or Parmesan cheese.

Make 4-6 "flower pedals" with the spinach leaves and press centers down to create a small indentation. Carefully crack the eggs on top of the spinach leaves being careful to contain the egg in the leaves as much as possible. Return to oven and bake for 10-12 minutes until eggs are cooked.

While eggs are cooking prepare fresh salsa by taking 4 dried chili arbols and lightly frying in a pan coated with olive oil. Chiles will turn black. Remove from heat. Put onion, garlic, fire roasted tomatoes, water, salt, and cilantro in a blender or food processor. Add chiles and blend well. This salsa is on the spicy side. If you want to tone it down, use 2-3 chiles and only 2 cloves of garlic.

Serve with salsa and crema Mexican drizzled on top.
