Spicy, Sweet and Sour Pineapple-Jalapeño Relish

1 cup finely chopped fresh pineapple

½ cup finely chopped red onion (optional)

2 tablespoons finely chopped cilantro

1 medium jalapeño pepper, finely chopped (seeded, if desired, for less heat)

½ teaspoon ground cumin

½ teaspoon ground coriander

½ teaspoon salt

½ teaspoon honey

Juice of ½ lemon

Combine the pineapple; red onion, if using; cilantro; jalapeño; cumin; coriander; salt; honey and lemon juice in a mixing bowl, tossing until well incorporated. Cover and refrigerate for at least 2 hours before serving. Best served same day it's made.

Makes 12 servings.
