Sour Cream Banana Bread

1 cup sugar

½ cup butter, softened

2 eggs, slightly beaten

1 teaspoon pure vanilla extract

1½ cups flour

1 teaspoon salt (I always use kosher salt in any baking)

1 teaspoon baking soda

1 cup ripe bananas

½ cup sour cream

1 cup walnuts, toasted

Preheat oven to 350 degrees. Cream butter and sugar in a bowl with an electric mixer. Add eggs and vanilla. mix well. In another bowl, mix dry ingredients and then add to butter mixture and combine just until well blended. Add in sour cream and bananas. Stir in walnuts. Pour into greased loaf /bread pan. Bake for 1 hour or until toothpick from center comes out clean. (Mini loaves, bake for 40 minutes)
