Bacon Wrapped Dates with Goat Cheese
8 slices of bacon (thinner is easier to work with)
16 dates - you can buy them pitted so you don't have to do it yourself!
4 ounces of goat cheese
Toothpicks
Preheat the oven to 350 degrees.
Using a spoon, stuff a small amount of goat cheese into the cavity of each date.
Cut the bacon slices in half. Wrap each date with a slice of bacon and secure with a toothpick.
Arrange evenly on a baking sheet and bake for 10 minutes. Take the dates out and, using the toothpick, turn the dates so they are lying on their side. Bake for another 5-8 minutes, until browned to your liking, and turn the dates to the other side and repeat.
Remove from the oven, put on paper towel lined plate, and let sit for 5 minutes before serving.
Makes 8 servings (2 dates per serving)
