Chicken Breast in Foil with Mushrooms, Onions and Thyme

1 teaspoon extra-virgin olive oil

1 teaspoon canola oil

2 boneless, skinless chicken breasts

½ cup mushrooms, coarsely chopped

2 tablespoons onions, finely chopped

2-3 sprigs fresh thyme

Salt and pepper to taste

Tear off two sheets of aluminum foil, large enough for chicken. Place one piece of foil on top of the other. Spread half the olive oil in the center of the foil. Make a bed of the mushrooms and onions in the center. Place chicken on the bed of mushrooms and onions. Coat chicken with the remaining olive oil. Season with salt and pepper. Place thyme sprigs on top of chicken.

Fold the foil over the chicken, making a seal. Seal as tight as possible but leave enough room around the chicken. Heat a skillet, large enough to hold the package, over high heat. Add enough canola oil to lightly coat the bottom of pan. Put package in pan. It will begin to sizzle and then expand; about two minutes. Cook another 5-7 minutes.

Remove from heat and let rest 2-3 minutes. Open a slit down the middle of the package. Be careful of escaping steam. Remove chicken, pour vegetables and juice over chicken and serve.

Cook's note: One breast can be eaten right away and the other used for another's night's meal, including as a topping with vegetables and broth for pasta.
