Penny's Cheddar and Savory Pickle Spread

8 - 10 ounce block of extra sharp white cheddar cheese, finely shredded*

2 tablespoons mayonnaise

¼ - ½ cup Branston Pickle, try a little at first and taste before you add more

Sturdy crackers, such as Triscuit for serving

Combine cheese and mayonnaise, mixing well until mixture resembles a cheese spread and starts to stick together. You can also do this step in a mixer or food processor if you prefer. Form into a flat mound approximately 1 inch thick on serving dish and top with Branston Pickle, spreading to within ½ inch of cheese edge. Serve at room temperature - spread on crackers.

*It is important to start with a block of cheese and grate it yourself, as packaged shredded cheese contains ingredients that keep it from sticking together, which is exactly what you need the cheese to do in this recipe.
