Influenced By Food-Related Travels, Eric Kim Puts Spin On Comfort Food Taste/Presentation As New Executive Chef Of Cadwell's Grille And Embassy Suites Deerfield

DEERFIELD - There's a new chef in town - Eric Kim - and he's brought his interpretation of the diverse tastes and presentations he has experienced in his substantial food-related travels to the comfort food offerings served to guests at Cadwell's Grille and the Embassy Suites Deerfield.

Diners from throughout the area, hotel guests, and banquet goers already are enjoying the addition of bolder flavors Kim discovered from his travels in Asia and his experiences at a wide variety of Chicago area restaurants and country clubs as he enhances the comfort food with a twist concept that has made Cadwell's Grille a successful urban-like dining experience in the suburbs.

"I like to balance sweet, sour, and salty to offer a bold, more broad spectrum of flavors," said the new Executive Chef. "I like vibrant colors as part of my presentation. Eating also is very visual. I want our diners to look at the dishes my kitchen prepares for them and get excited for the first bite."

Added Dear Wungwattana, Director of Food and Beverage at Cadwell's Grille and Embassy Suites Deerfield: "We chose Eric for his knowledge of food and his drive and passion for the culinary arts to create the best dining experience for our guests. He's got a great palate and he knows how to bring out the flavors of his food. Their response so far supports our assessment of our new executive chef. He is taking our comfort food concept to a new level. It's the same popular dishes our guests know and love but with his unique spin," she said.

Kim is a graduate of the Cooking and Hospitality Institute of Chicago Le Cordon Blue. He gained experience in his travels throughout Asia, at restaurants in Seoul, Korea, and in stints with many well-regarded Chicago area dining establishments. Most recently, he was executive sous chef at Valley Lo Sports Club in Glenview. His varied experience gives Kim an edge in striving to meet the demands of diners, hotel guests, and banquet attendees.

"My challenge is to wow our current clientele so they will spread the word to those who have not experienced Cadwell's Grille or the Embassy Suites. The food and the service is already great. I just want to take this establishment and my culinary team to the next level," said Kim.

To that end, Kim already has added a melt-in-your mouth whiskey-soaked (braised for 12 hours) Reuben sandwich as a blue plate special that has been selling so well it may be added to the regular menu under the name, "Whiskey and Rye." It will have his own-made sauerkraut and whisky-infused caraway seeds, melted Swiss cheese, and tangy 1000 island dressing. He also is considering adding specials to the already popular menu, such as a ribeye steak with balsamic marinated grilled vegetables (Portobello mushrooms, red bell peppers, asparagus, and yellow squash), buttermilk fried onions, and roasted fingerling potatoes with lemon zest and fresh herbs.

Located one block south of Lake Cook Road in Deerfield, Cadwell's Grille offers comfort food with a twist, a downtown experience featuring grass fed burgers, barbecue ribs and short ribs, prawns and grits, rotisserie chicken, grilled steaks, and seared pork belly. Cadwell's Grille is a dining destination focusing on a modern and fun ambiance, known for excellent service and great food.

Cadwell's Grille, which seats 55 in the main dining room, 20 in the bar, and 75 in the adjacent Cadwell's Lounge, was recently named #1 restaurant in Deerfield by contributors to the well-respected, influential TripAdvisor online rating site.

Most recently, Dear Wungwattana, Director of Food and Beverage of the Embassy Suites in Deerfield, received the prestigious Spirit of Embassy Award from Embassy Suites Hotels, the national brand of upscale, all-suite hotels, part of Hilton Worldwide, the leading global hospitality company. Nominated by her peers, Wungwattana was one of only 70 chosen from nearly 30,000 team members nationwide to win the award.
