Tuna Salad

2 12 ounce cans Albacore tuna in water

1 green pepper fine diced

1 red pepper fine diced

1 yellow pepper fine diced

10 green olives chopped

1 small red or white onion chopped

5 radishes chopped

½ cup mayonnaise

2 tablespoons Dijon mustard

2 teaspoons seasoned pepper

1 teaspoon garlic salt

1 teaspoon pepper

A dash of cayenne pepper

Chopped hard boiled egg, optional

Mix first seven ingredients into a bowl. Mix mayo, mustard and seasonings (milk may be added to loosen dressing if needed) pour over tuna and other ingredients and gently fold to combine. Chill. Serve with Town House crackers as a dip or on toasted whole wheat as a sandwich. Serves a crowd.
