Roasted Garlic Pizza

The ingredients have been updated to correct the amount of garlic.

2 bulbs of garlic, roasted

1 extra thin Pillsbury Pizza Crust

Olive Oil

½ cup Parmesan cheese

½ bag fresh baby spinach (stems removed)

1 pound sliced mushrooms

1 small onion chopped

2 cups shredded mozzarella cheese

1-2 teaspoons oregano

1-2 teaspoons seasoned pepper

Cut top off garlic bulbs (do not remove papery outer layer) place on aluminum foil and drizzle with olive oil, salt & pepper. Close foil to cover bulbs and roast in 425 oven for 25-30 minutes. Let cool.

Pre-bake pizza crust according to package directions (prick dough with fork several times before baking.)

Squeeze garlic bulbs into a bowl, add olive oil (¼ cup or more to desired consistency) and mix together with parmesan cheese to a spread able consistency. Spread on pizza crust. Add ingredients in order, top with mozzarella cheese and seasonings. Bake at 425 until cheese is melted and bubbly.
