Honey-Ginger Glazed Salmon

2 salmon fillets (4 to 6 ounces each)

2 tablespoons honey

2 tablespoons fresh lemon juice

1½ teaspoons fresh ground ginger

¼ teaspoon salt

⅛ teaspoon ground black pepper

Preheat the oven to 450 degrees. Spray an 8-by-8-inch glass baking dish with cooking oil. Place salmon fillets in dish, skin-side down. (Or remove skin.) In a small bowl, whisk together honey, lemon juice, ginger, salt and pepper. (If honey is too stiff, zap mixture in the microwave to loosen and then mix well.) Drizzle honey mixture over salmon and spread to cover most of the fillets.

Bake, uncovered, until fish flakes easily with a fork, 8 to 10 minutes. Remove from pan and serve as desired.

Serves 2; start to finish less than 20 minutes.
