Kitchen scoop: Lemony poppyseed dressing enchances spring veggies

If I say lemons and poppy seeds, what comes to mind? Muffins? Tiny little cakes dripping with icing? I do love a good, buttery lemon poppy seed cake, but today I'm talking about salad dressing. That's right: lemon poppy seed dressing.

When spring veggies just start to appear, you need only the slightest dressing accompaniment to bring out all their tender goodness. Steamed asparagus and lemon poppy seed dressing is delicious; fresh broccoli florets dipped in lemon poppy seed dressing is inspired; spring salad greens taste amazing with the tiniest drizzle of dressing. Honestly, dipping your pinkie finger in the lemon poppy seed dressing and popping it straight in your mouth is simply wonderful.

I know you're going to love this new homemade dressing as much as I do. Best of all, it takes about five minutes to zip together. And here's a hint to make cleanup easier: Using nonstick cooking oil, spray the cup you plan to measure the honey in, and presto! Every last drop of honey makes it into the food processor - not stuck to the glass. Enjoy!
