Italian Ricotta Cookies

2 sticks (1 cup) butter, softened

1 cup ricotta cheese

2 teaspoons vanilla extract

2 cups sugar

2 eggs

4 cups flour

½ teaspoon salt

1 teaspoon baking soda

1 cup powdered sugar

4-5 tablespoons milk

Assorted sprinkles, optional

Heat oven to 350 degrees. Line a couple baking sheets with parchment paper.

In a large bowl, mix butter, ricotta, vanilla, sugar and eggs until well combined. Add flour, salt and baking soda and mix until blended well.

Drop by teaspoon full onto prepared pans and bake 10 minutes. Cool thoroughly. Cookies should be soft.

For the frosting: In a medium bowl, stir powder sugar with milk. Dip cooled cookies in frosting and decorate, if desired.

Makes about five dozen.
