Spinach Balls with Parmesan Cheese and Garlic
2 packages (10 ounces each) frozen chopped spinach (thawed, well drained and squeezed dry)
1 cup finely chopped onion
4 large eggs, lightly beaten
¾ cup butter, melted
½ teaspoons salt
¼ teaspoons black pepper
2 teaspoons fresh thyme
3-4 cloves garlic, minced
¾ cup grated parmesan cheese
2 cups herb-seasoned stuffing mix
Heat oven to 350 degrees. Grease a rimmed baking sheet.
In a large bowl, combine all of the ingredients and mix well. Refrigerate 30 minutes to allow the stuffing mix to soften.
Roll chilled spinach mixture into 1- to 1½-inch balls and place on prepared baking sheet. Bake 15-20 minutes or until heated through and slightly browned. Serve warm.
Makes 3 to 3½ dozen.
