Buffalo-Style Blue Cheese Stuffed Burgers

½ cup finely chopped celery

½ cup finely chopped onion

1 tablespoon vegetable oil

2 ounces Roth Buttermilk Blue Cheese

1 pound ground beef

½ cup prepared Buffalo sauce, divided

Salt and pepper to taste

4 buns

4 tomato slices

Lettuce

In a saute pan over medium-high heat, cook celery and onion in vegetable oil until slightly tender; set aside to cool.

Shape blue cheese into four equal discs each about the size of a silver dollar. Place in freezer to chill while preparing ground beef. (Cheese should not freeze, but become chilled and firm.)

In a medium bowl, combine ground beef, celery and onion. Add ¼ cup Buffalo sauce and mix until thoroughly combined. Season with a little salt and pepper. Divide mixture into fourths.

Remove blue cheese from freezer. Using your hands, wrap each cheese disc with ground beef to completely encapsulate cheese and forming into a burger shape.

Grill, broil or pan fry over medium high heat for about 10 minutes, or until cooked to your liking.

Place cooked burgers on buns and top with 1 tablespoon Buffalo sauce, a slice of tomato and some lettuce. If you're really a blue cheese lover top with a little more cheese!

Serves four.
