Amaranth Flatbread with Goat Cheese, Sausage and Veggies

Flatbread

½ cup amaranth flour

¾ cup gluten free corn flour

¼ cup diced red onion

2 teaspoons amaranth

1 teaspoon salt

½ cup water

3 tablespoons olive oil

Goat Cheese Spread

4 ounces goat cheese

1½ tablespoons honey

Toppings

1 Italian sausage link

1 tablespoon olive oil

½ teaspoon crushed red pepper flakes

½ yellow pepper cut into ¼-inch strips

½ red pepper cut into ¼-inch strips

¼ large red onion, thinly sliced

3 canned artichoke hearts, drained well and chopped

1 cup balsamic vinegar

1 tablespoon sugar

For the dough: Heat oven to 375 degrees.

Add all the dry ingredients and the red onion into a large bowl and mix. Add water and stir with a fork until well blended. Split into two balls. Put olive oil on hands and flatten dough onto greased baking sheet into two 4-inch-by-8-inch flatbreads. Bake 15 to 16 minutes or until edges slightly brown. Let cool.

For the cheese spread: Using a fork, mix goat cheese and honey together. Spread half the mixture onto each flatbread.

Grill sausage on medium heat for about 20 minutes, turning occasionally.

In a medium frying pan, heat olive oil and red pepper flakes for 1 minute on medium high heat. Add onion and peppers, sauté on medium heat for 10 minutes, stirring occasionally. until slightly softened. Slice sausage into thin, bite-sized pieces about the size of a quarter. Add to veggie mixture. Add the chopped artichoke hearts and cook mixture for 2 minutes. Divide mixture between the two flatbreads.

In a small sauce pan, bring balsamic vinegar to a boil over medium heat. Add sugar. Lower to medium low and cook for 20 minutes, stirring frequently. Mixture will reduce in half. Let cool. Put in squeeze bottle. Drizzle over pizza.

Serves two as an entree; four as an appetizer.
