Grilled Mexican Pizza

1 pound grilled sirloin or skirt steak, sliced very thinly

1 small onion, sliced and grilled

1 small poblano or green bell, sliced and grilled

1 cup mushrooms, sliced and grilled

Dough for 1 medium pizza, homemade or store bought

Olive oil

½ cup salsa verde

6 ounces shredded cheddar

6 ounces shredded monterey jack

1 tomato diced, or 1 can (10 ounces) no-salt-added diced tomatoes, drained well

Cilantro, fresh to garnish

Grill sirloin or skirt steak to your preference. Let rest, slice very thinly.

Put onion, peppers and mushrooms in a grill basket and cook until tender.

Work dough into a 12-inch circle. Brush both sides of dough with olive oil. Place pizza dough on grill grates for 4 to 5 minutes on each side.

Remove crust from grill. Top with salsa, cheese, steak, diced tomato and veggies. Place pizza back on grill, close lid so cheese will melt.

Serves four.
