Sweet and Spicy Piggy Pearwich

1 cup brown sugar

2 tablespoons dry mustard

½ teaspoon cinnamon

1 teaspoon cayenne pepper

½ teaspoon nutmeg

1 teaspoon red pepper flakes

1 pound thick cut bacon

4 ounces cream cheese

1 tablespoon maple syrup

1 pear, cored and thinly sliced

Heat oven to 350 degrees. Line a cookie sheet with foil and place a cooling rack on top.

In a small bowl, mix the brown sugar, mustard, cinnamon, cayenne pepper, nutmeg and red pepper flakes.

Lay bacon strips on a cooling rack. Sprinkle sugar mixture on the bacon. Bake 30 minutes.

In a separate bowl, mix the cream cheese and maple syrup.

After baking, cut the bacon into 1-inch pieces. Spread a little of the maple cream cheese onto each piece of bacon. Place a slice of pear between 2 bacon pieces.

Serves four.

  Bacon gets a coating of brown sugar and spices before it bakes. The bacon will be the "bread" for the Sweet and Spicy Piggy Pearwich. John Starks/jstarks@dailyherald.com
