Habanero Mango Cucumber Salsa
1 large cucumber, seeded and diced very small
1 mango, seeded and diced very small
2 tablespoon garlic, minced
¼ cup green onions, finely sliced
¼ cup fresh cilantro, finely chopped
1 teaspoon lime gelatin
2 tablespoon olive oil
½ teaspoon salt
¼ teaspoon pepper
½ teaspoon habanero mango hot sauce (optional; add more if you want to grow some hair on your chest)
Mix everything in a large bowl and let flavors become best friends in fridge for at least 2 hours. Salsa can be made the night before or before heading to work.
Serves six to seven.
