Toasted Cheese Bruschetta with Marinated Tomatoes

1 loaf crusty French bread, split in half lengthwise

2 tablespoons unsalted butter, softened

2 cloves garlic, minced

2 cups shredded mozzarella cheese

1 cup shredded parmesan cheese

4 vine-ripened tomatoes, chopped

4 tablespoons extra-virgin olive oil

3 tablespoons balsamic vinegar

1 tablespoon red wine vinegar

½ cup chopped fresh basil

1 shallot, minced

Sea salt and freshly cracked black pepper

Heat oven to 375 degrees.

Place the French bread on a sheet pan, cut side up. Lightly spread the butter on both halves of the bread. Sprinkle with the minced garlic. Top with the shredded cheeses. Bake 10-15 minutes, until the cheese melts.

While the bread is in the oven, make the marinated tomatoes. In a large bowl, combine the tomatoes, olive oil, balsamic vinegar, red wine vinegar, basil and shallot. Mix well. Season with salt and pepper, to taste. Marinate for 10 minutes.

Take the cheese bread out of the oven and spoon the marinated tomatoes on top. Slice into four portions and serve.

Serves four.
