Rose's Famous Meatballs

1 pound ground chuck

1 pound ground pork

4 eggs, lightly beaten

3 cups bread crumbs

1 cup water

1 teaspoon freshly ground black pepper

2 teaspoon salt

2 teaspoon fennel seeds

2 cloves garlic, minced

1 cup finely chopped fresh Italian flat-leaf parsley

Heat oven to 350 degrees.

In a large bowl, mix the meats together; add the eggs, bread crumbs and remaining ingredients. Mix well (usually with your hands a là Mario Batali!). Form into 1- to 2-inch balls and place on a cookie sheet.  Bake 25-30 minutes until tops are golden brown. There is no need to turn them over. When cooled, they can be dropped into spaghetti sauce near serving time or frozen for future use.

Serves five to eight.
