Cherry Pancakes

2½ cups rolled oats

2 cups plain low fat or Greek yogurt

2 cups skim milk

2 teaspoons brown sugar

½ cup all-purpose flour

½ cup whole wheat flour

2 teaspoons baking soda

2 teaspoons salt

4 large eggs, beaten

½ cup chopped walnuts

½-1 cup pitted, chopped cherries

In a large bowl, combine oats, yogurt, milk and brown sugar. Stir in flours, baking soda and salt. Add beaten eggs and mix well. Stir in walnuts. Carefully, fold in cherries.

Heat a griddle over medium heat. When hot, working in batches, spoon a small amount of batter onto the griddle and cook until bubbles on top start to pop. Flip and cook until other side browns, about 2 minutes. Add additional milk if batter becomes too thick. Serve hot with your favorite syrup. A side of turkey bacon and fresh fruit completes this healthy, hearty breakfast.

Serves six.
