Apple Pear Granola Crisp

4 cups pears, peeled, coarsely chopped (about 6 medium pears)

4 cups apples, peeled, coarsely chopped (about 6 medium apples)

½ cup brown sugar

2 tablespoons all-purpose flour

2 tablespoons lemon juice

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

4 ounces goat cheese, crumbled

2 cups fruit and nut granola (such as Cascadian Farms)

½ cup butter, melted

3 tablespoons honey

 

Heat oven to 375 degrees. Spray bottom and sides of 9-by-13-inch (3 quart) glass baking dish with cooking spray.

In large bowl, stir pears, apples, sugar, flour, lemon juice, cinnamon and nutmeg; fold in cheese. Spread into prepared pan.

In same bowl, mix granola and butter; sprinkle over fruit mixture. Drizzle honey over all. Bake 50-60 minutes or until apples are tender and topping is golden brown; cover with foil after 20 minutes to prevent excessive browning. Serve warm.

Serves eight.
