Sherry Cheese Pate

6 ounces cream cheese, softened

1 cup (4 ounces) shredded sharp cheddar cheese, preferably white

4 teaspoons sherry

½ teaspoon curry powder

1/8 teaspoon salt

½ cup mango chutney

Finely sliced green onions, white and green parts, for garnish

Crumbled bacon, for garnish

Beat together the cheeses, sherry, curry powder and salt until well blended. Spread on serving platter to ½ inch thickness. Chill until firm.

When ready to serve, spread with chutney and sprinkle with onions or bacon, if desired. Serve with crackers.

Serves eight to 10.

Cook’s note: If the mango chunks in the chutney are too large, chop them before spreading chutney on the cheese.
