Crockin’ Lasagna

2 pounds ground beef

2 jars (24 ounces each) marinara sauce

2 containers (15 ounces each) ricotta cheese

3-4 cups shredded mozzarella cheese

1 egg, beaten

½ box uncooked lasagna noodles

Italian seasoning, to taste

Fresh baby spinach (2 to 3 handfuls)

Brown hamburger meat. Drain away grease and stir in marinara sauce; simmer for 20 minutes.

While sauce simmers, in a bowl combine ricotta cheese, mozzarella cheese, egg and Italian seasoning; mix well. Set aside 2 cups meat sauce and 1 cup cheese mixture.

Spray the slow cooker with nonstick cooking spray, and start your layers of 1) meat sauce, 2) uncooked lasagna noodles, 3) ricotta cheese mixture and 4) spinach; repeat layers one more time. Top with remaining meat sauce and cheese. Cook on LOW for 3 hours; any longer will overcook the noodles.
