Salmon with Cucumbers and Capers

1 cup mayonnaise

cup sour cream

1 tablespoon capers (nonpareilles)

cup diced cucumber

4 salmon fillets or steaks, skinless

Olive oil

Salt and pepper

Fresh shredded parmesan cheese

In a small bowl, combine mayonnaise, sour cream, capers and cucumber; set aside.

Lightly rub fillets with olive oil, salt and pepper. Grill over direct heat turning once (3-5 minutes depending on thickness of the fillet). As soon as your flip the fish, spread the cucumber sauce over the fillets and top with the shredded parmesan cheese. Grill until desired doneness.

Serves four.

Cook's note: This topping works well with most grilled fish. I serve this with green beans that have been buttered, sprinkled with Lawry's Seasoned Salt and topped with diced tomatoes.
