Steve’s Pan Pizza

1 cup tepid water

1 packet (¼ ounce) quick dry yeast

2¾ cups flour, divided

¼ cup corn meal

¼ cup salad oil

2 tablespoons olive oil

1 pound shredded mozzarella

2 cans (28 ounces each) whole tomatoes, drained and crushed

Dried oregano, to taste

Dried basil, to taste

Romano cheese

Pepper

Garlic powder

In a medium bowl, mix water and yeast; let set 10 minutes. Stir in 1¼ cups flour and corn meal and mix for 10 minutes. Add 1½ cups flour and knead dough for 15 minutes and set in a warm place to rise, about 90 minutes. Punch down and let rise a second time, about 90 minutes.Heat oven to 400 degrees. Grease bottom and side of a 13-inch round deep-dish pizza pan.Work dough evenly into the sides and bottom of the pan. Top dough with 1 pound shredded mozzarella cheese and any other ingredients you like (mushrooms, cooked sausage, peppers).Spoon the crushed tomatoes on top and sprinkle with oregano, basil, Romano cheese, pepper and garlic powder.Bake 45 minutes until crust is golden brown.Serves four to five.
