Overnight Pulled Pork Poor Boy

1 pork shoulder roast, about 5 pounds2 tablespoons olive oil2 tablespoons favorite seasoning rub, such as a barbecue or pork rub (see note)French rollsPrepared coleslawFrench fried onion ringsHeat oven to 250 degrees.Wash and pat dry the pork; rub the oil all over it and sprinkle with seasoning mix. Place in shallow baking dish and roast, uncovered, for 9 hours (overnight works great), Turn off oven and let sit 1 hour.Transfer roast to a large plate. Remove and discard bone and excess fat, then shred meat with two forks.Drain excess oil from baking pan, leaving some pan drippings. Return meat to pan and mix with drippings. To serve: Spread French rolls with coleslaw, top with pork and favorite barbecue sauce, sprinkle on onion rings.Serves six to eight.Cook's note: To make your own seasoning mix, try 1 tablespoon each garlic powder, onion powder, sea salt and ground pepper.
