Fred's Red Barbecue Sauce

cups ketchup

1 small can (8 ounces) tomato sauce

½

cup water

½

cup brown sugar

½

cup red-wine vinegar

cup Worcestershire sauce

2 tablespoons reduced-sodium soy sauce

Juice of 1 lemon

1 teaspoon bottled minced ginger

½

teaspoon black pepper

½

teaspoon dry mustard

½

teaspoon garlic powder

½

teaspoon onion powder

½

teaspoon dried oregano leaves

½

teaspoon dried basil leaves

½

teaspoon crushed red pepper, optional

¼

teaspoon allspice, optional

Place ingredients in a small saucepan, and stir to mix well. Bring to a boil over high heat, about 3 minutes. Reduce heat to low, and simmer for 10 more minutes (or up to 30 minutes), stirring occasionally, to blend flavors. Remove sauce from heat, and measure out portion needed for grilling. The remaining sauce will keep refrigerated in an airtight container for up to 1 month.

Makes 1 quart.
