I recently received a copy of "Modernist Cuisine at Home" (aka MC@H) by Nathan Myhrvold and Maxime Bilet and have this to say about it: If you're hungry, do not open MC@H without a bib or napkin handy because you're guaranteed to drool after just a few pages.

And, even though Dr. Lustig simplified his explanations to make it easier for non-medical readers, it's also not the easiest of reads. What Fat Chance has is solid, study-backed information about why there's a world-wide obesity epidemic.

On Oct. 8, 1992, Don Mauer's Lean and lovin' it appeared in the Daily Herald for the first time. Little did he think that 20 years and almost 900 columns later he'd still be lovin' it. When the column started Don had shed 105 pounds and had kept it off for two-plus years by cooking great-tasting, low-fat and lower-calorie meals. Through the years he's shared healthier, low-fat recipes to inspire others to eat healthy and maintain a healthy weight.

And that can be confusing for consumers. For those food items, "natural" is simply a marketing tool, appealing to consumers hoping to purchase a minimally processed food free of "unnatural" ingredients.

Several years ago reduced-fat peanut butter appeared at my supermarket, and I was one excited guy, until I looked at the Food Fact label and found that it delivered 190 calories and 12 fat grams. Sure, reduced-fat peanut butter had less fat, but they added carbohydrates, which kept the calories the same. Those carbs seemed to make reduced-fat peanut taste sweeter to me, too. Not much of an advantage.

A mushroom is a mushroom is a mushroom; right? Sure they're all fungi, but not all mushrooms are created equal. Let's look at the basic button mushroom. Button, or white, mushrooms (Agaricus bisporus) are the most common mushroom. They command the most space in the produce section and are the ones most often in cans of soup and on our pizzas.

For years I've been pleased with my method for removing the majority of fat from salad dressing, but recently I read a study that stated: "If you have a salad with a fat-free dressing, there is a reduction in calories, but you lose some of the benefits of the vegetables." So I started to rethink my approach.

It still amazes me that I can go into a supermarket at anytime of the year and buy fresh corn on the cob. When I was kid, that wasn't the case. We ate corn on the cob only when it was freshly picked from Illinois fields. The rest of the year we had to make do with frozen corn.
