1 cup butter, softened
@ cup dark brown sugar
2 eggs
1 teaspoon vanilla extract
1 teaspoon baking soda
Pinch of salt
2¼ cups whole wheat flour
1 teaspoon mayonnaise
1 teaspoon cream cheese, softened
12 ounces organic semisweet chocolate chips
Heat oven to 375 degrees.
In a large bowl of a stand mixer, beat butter and brown sugar until light and fluffy. Add eggs, one at a time, mixing in well. Mix in vanilla.
Add baking soda, salt and whole wheat flour, mixing until well combined. Beat in mayonnaise and cream cheese.
By hand, stir in chocolate chips. Drop by rounded teaspoonfuls onto ungreased cookie sheets; bake 10-12 minutes or until edges are brown and centers are still soft. Remove cookies from cookie sheet and let them cool on a brown paper grocery bag.
Makes 31/2 dozen.
