Portillo's close to deal in Minneapolis

Oak Brook-based Portillo's is getting close to opening a restaurant near Minneapolis, Minnesota. According to a Pioneer Press report Thursday, Portillo's has submitted a development application to set up a restaurant in the city of Woodbury, north of Hudson Road and west of Radio Drive, near Minneapolis. The application is still subject to review by Woodbury's planning commission and city council. Approvals could be a few weeks away at the earliest, the report said. Earlier this year, Portillo's CEO Keith Kinsey told the Daily Herald that owner Boston-based Berkshire Partners plans to continue expansion of the restaurant nationwide. It had been a dream of founder Dick Portillo to see a restaurant in each of the 50 states. A Portillo's spokesman was not immediately available for comment.
