Secret ingredients a big part of Scandinavian fish boil in South Elgin

The 16th Annual Scandinavian Fish Boil & Harvest Fest, was held Saturday at Vasa Park in South Elgin.

It was sponsored by Scandinavian Park Inc., with entertainment by Pat Spaeth.

For at least the past 10 years Jim Stopka, originally of Geneva, who now resides in Minocqua, Wisconsin, has been perfecting his recipe for boiled fish.

"It's a secret," Stopka said of the ingredients as he added a few more to the boiling pots Saturday at the event.

Scandinavian Park Inc., hosts numerous community events throughout the year, celebrating Scandinavian and Nordic traditions, including music, art, crafts, food and dance.

Vasa Park, a tranquil 25-acre property along the Fox River, serves as a learning center for local schools, community colleges and scouting organizations.
