Pflaumen Kuchen

2 cups flour

2 teaspoon baking powder

¼ teaspoon salt

4 tablespoons butter, softened

1 egg

¾ cup milk

1 teaspoon vanilla

3-4 pounds prune plums, cut in quarters, discard pits

For the streusel

½ cup sugar

¼ cup flour

3 tablespoon butter

1 teaspoon cinnamon

Preheat oven to 350 degrees. Grease and lightly flour a cookie sheet with sides or jellyroll pan.

Mix together flour, salt and baking powder, set aside. Cream butter and sugar until well beaten. Add egg and vanilla, beat well. On low speed, starting with flour mixture, add flour and milk alternately until blended. Spread batter evenly into pan. Lay fruit, skin side down, in long rows, crowding fruit, the more the merrier, pressing down slightly in batter. In small bowl combine streusel ingredients. Crumble streusel through your hands over fruit evenly.

Bake for 40 minutes

You can substitute any fruit, Grandma Krauss used thinly grated apples, I like thin apple slices and I throw a few raisins or currants here and there … Peaches and cherries work well too.
