Bacon Guacamole

6 strips of bacon

6 avocados,

1 tomato, seeds removed and chopped

½ red onion, chopped finely

1 cup cilantro

1 jalapeño ribbed and chopped

2 limes

Salt (optional)

Cook bacon as you normally would. When it's finished, set aside and let cool. Place your avocados, seed and shell removed, in a large mixing bowl, preferably metal. Add tomatoes, onion, cilantro and jalapeño. Squeeze juice from 1 whole lime into the guacamole. Finely chop up the cooked bacon, and add it to the bowl. Mix ingredients together, and let sit for an hour. Taste the guacamole and add more lime juice and/or salt to taste. Enjoy with tortilla chips or flat pretzels.
