Oven-Baked Sweet Potato Frites

1½ pounds sweet potatoes

Extra-virgin olive oil

Sea salt

Preheat oven to 425 degrees. Peel sweet potatoes. Cut just enough from each side to make the sweet potato somewhat square or rectangular based on its original shape; this will aid in cutting. Cut the squared off pieces into ½-inch slices and then cut the slices into ½-inch pieces. Place a small amount of extra-virgin olive oil on a baking sheet and spread with a paper towel to give you a thin even coat or use olive oil pan spray. Place fries on the baking sheet and coat with a small amount of extra-virgin olive oil. I have a spritzer that I use to spritz a small amount. Sprinkle with sea salt to taste. Bake for about 10 to 15 minutes and then turn fries. Bake for another 10 to 15 minutes or until light brown, and insides are soft. Serves 6 as a small side.
