Buttered coconut pie a throwback to Sunday dinners past

Today's recipe is a throwback to my childhood Sunday dinners, when an array of pies lined the sideboard at every family gathering. There were a few standards - pecan, apple and sweet potato always made a showing. But that fourth pie was always something different, a surprise for the gathering that day.

I don't know why this classic Buttered Coconut Pie made an appearance only once in a while. To my young palate, it was the most decadent morsel imaginable. Of course I wanted the entire pie to myself, but as the youngest I was usually last to the dessert spread. Thank goodness I was one of the few coconut lovers in the family, so I was most assuredly guaranteed a huge slice.

It really is an easy pie, although many recipes garner that description these days. Basic ingredients, straightforward directions - what more could you want? I hope you enjoy this splendid, rich and buttery result!
