Kate Di Leo's Fruit Galette

For the crust

1 stick butter, cubed and frozen

¼ cup confectioner's sugar

1½ cups flour

¼ teaspoon salt

¼ cup ice water

1 egg

For the filling

3 cups fruit

2 tablespoons sugar

1 teaspoon vanilla

Place the fruit in a bowl and toss with sugar and vanilla. Set aside while working on the crust. Preheat oven to 425 degrees.

Using a food processor, mix flour, sugar, and salt until combined. Sprinkle butter pieces on top and pulse until the mixture resembles coarse cornmeal. Add the ice water and mix until the dough comes together.

Roll out dough on a floured surface until it is about ⅓-inch thick. Place on a pizza pan or baking sheet that has been lined with parchment paper and place fruit in the center of the dough.

Fold the edges of the dough over the fruit. Brush with beaten egg. Place in oven and bake for 25 to 35 minutes.

Serves four to six
