Greek Isles inspire refreshing Caesar salad

When it's hot and steamy outside, the only thing that sounds appetizing is a crisp green salad — again. Even with the abundance of fresh veggies at the corner stand, it's still hard to get excited about another salad. That's when you look to another region for inspiration.

Today's recipe was influenced by the Greek Isles.

This Greek “Caesar” Salad's combination of mint and romaine create refreshing flavors, and it's topped off with creamy feta-lemon vinaigrette. Of course it wouldn't be a summer salad if it weren't piled high with vine-ripe tomatoes and crisp cucumbers. Red onion adds a punch, but it's totally optional.

As a side salad, this recipe is wonderful with grilled chicken, a smear of hummus and the crunch of a cold carrot. But it is hearty and filling enough with its bright, bursting flavors to stand on its own as a main dish. The recipe is sized for four side salads or two main dish servings. It is easy to double or triple for a larger crowd.
