Ragin' Cajun Crawfish Boil returns to June 7 farmers market

Those crazy-tasting shellfish return to the Dundee Farmers Market at 11 a.m. Sunday, June 7, at The Depot, 319 N. River St., East Dundee.

Prepared by Chef Cassandra of Ruthella's New Orleans Cuisine, the Ragin' Cajun Crawfish Boil features succulent crustaceans along with corn and potatoes, prepared through recipes handed down from generation to generation.

Never had crawfish before? Chef Cass will explain how to prepare them as part of the boil and demonstrate how to eat crawfish, right out of the shell.

"Two-hundred pounds of fresh, in-season crawfish has been delivered just for this event. I've got family members that are coming in from Louisiana to help out. It'll be a great time for everyone," remarked Cassandra Montgomery of Ruthella's.

Crawfish season typically begins in March and ends in July when hurricane season begins.

A farmers market favorite, Chef Cass will prepare the traditional crawfish boil including corn on the cob, garlic, potatoes, onions, lemons and spices for $10.

A typical crawfish boil is a social affair, eating with your hands and enjoying the good company of others.

Guests of the Farmers Market are encouraged to eat as much crawfish as they can, in true Louisiana style. Neatness is not required at this event, only a hearty appetite!
