Sunny Day Breakfast Quiche

4 cups shredded hash browns

2 cups shredded sharp cheddar cheese

4 slices bacon, cut up

½ cup red pepper diced

1 cup mushrooms, sliced

5 eggs

1½ cups whole milk

Heat oven to 375 degrees.

Place 4 cups shredded hash browns into 9 inch pie plate. Over the hash browns sprinkle cheese, bacon, pepper and mushrooms. In large bowl beat eggs and milk, pour evenly into pie plate. Bake for 15 minutes at 375 degrees. After 15 minutes turn oven down to 350 and bake for 15-25 minutes longer, until golden brown on top. Remove from oven and let sit at least 5 minutes before serving.

Serves 4-6. Serve with toast and fruit salad.
