Taco Casserole

1½ pounds ground beef

1 packet (1.25 ounces) taco seasoning

1 cup water

12 medium flour tortillas

1 pound American cheese slices

2 cans (14 ounces each) creamed corn

8 ounces sliced mozzarella cheese

Heat oven to 375 degrees.

In a large frying pan, brown the ground beef and drain off fat. Stir in seasoning packet and water and cook until all water is gone and seasoning is absorbed into the meat.

While meat browns, open up the tortillas. Top each tortilla with 1 slice American cheese (or 1½ slices if you like extra cheese); stack on a small plate until ready to stuff.

Pour 1 can of creamed corn into a 9-by-13-inch casserole dish. Add a heaping spoonful of meat to each tortilla, roll up and place seam-side down in the pan. Pour remaining corn in between each tortilla and on sides. Cut mozzarella cheese on an angle place two pieces on each tortilla. Bake 45 minutes.

Serves six to eight.
