Pumpkin Spice Biscotti

1 box (15-16 ounces) spice cake mix

1 cup flour

2 large eggs

½ cup melted butter

½ cup canned pumpkin

½ teaspoon pumpkin pie spice

½ cup chopped pecans

10-15 orange white chocolate disks, melted

Heat oven to 350 degrees. Line a cookie sheet with parchment paper.

Combine cake mix, flour, eggs, melted butter, pumpkin puree and pumpkin pie spice in mixing bowl; mix for about 2 minutes. Stir pecans into the batter.

Divide the dough into two 2-by-8-inch rectangles about 1 inch thick. Place on prepared cookie sheet and bake 30-35 minutes. Remove from oven. Let cool 10 minutes.

Slice each rectangle into ½-inch thick slices; slicing on an angle gives you more cookies. Lay the slices on their sides and bake 10 minutes longer.

Cool cookies completely before you melt the orange chocolate and drizzle over each cookie.

Makes about 32 pieces.
