Roasted Brussels Sprouts with Parmesan
1½ pounds brussels sprouts, trimmed and cut in half through the core
3 tablespoons olive oil
¾ teaspoon kosher salt
½ teaspoon freshly ground black pepper
2 tablespoons parmesan cheese, grated
Heat oven to 400 degrees.
Place brussels sprouts in a bowl and toss with olive oil, salt and pepper. Transfer brussels sprouts to a sheet pan and roast for 20-30 minutes, until crisp on outside and tender inside. Shake pan occasionally to brown evenly.
Sprinkle with parmesan before serving.
Serves six.
