2 cups chopped beets
½ cup canola oil
1½ cups brown sugar
1 teaspoon vanilla extract
2 cups flour
2 teaspoons baking powder
1 teaspoon salt
½ cup chocolate chips
Heat oven to 375 degrees. Grease a bundt pan.
Boil beets until tender, drain and mash, or purée in food processor.
In a large bowl, combine beet purée, oil, sugar and vanilla and mix until smooth.
In a separate bowl, combine flour, baking powder and salt and stir. Add dry mixture to wet mixture in batches, stirring to combine each new addition of dry ingredients. Once all ingredients are blended into a smooth batter, add chocolate chips and mix until well combined.
Pour batter into prepared pan and bake 45-55 minutes, or until a toothpick comes out clean from center of cake.
