Cold Watermelon Soup

6 cups very cold watermelon juice made from ripe, chilled, seeded watermelon

1¾ cups buttermilk or plain yogurt

1 tablespoon of gin or vodka, optional

½ teaspoon rose water, optional

Salt to taste

Garnish with mint

Combine all the ingredients except the garnish and chill. Serve in chilled goblets and garnish with mint

Serves six to eight (as a first course).
