2 pounds white potatoes, cubed

1 pound large carrots, cubed

1 pound sweet onions, chopped


Salt and pepper

Put the potatoes, onions and carrots in a large pot and cover with water. Add salt and bring to a boil. Cook until fork tender but not mushy. Drain and return to pot.

Add butter, to taste, and mash together until well incorporated. Season to taste with salt and pepper. Serve with pot roast, meatloaf or sausage.

Serves two to four.
